Cincinnati based restaurant Skyline Chili has officially opened its doors in Lexington, KY. Now Lexington Skyline lovers won’t have to travel far for the famous Coneys and Ways.
One Holland Corporation, the largest Skyline franchise owner, broke ground at 2850 Richmond Road back in March. The 4,855-square-foot Skyline features the first-ever double-lane drive through, an open kitchen concept that allows patrons to watch as their food is prepared, and a 132 person dining area with flat screen TVs and a fireplace.
When you walk through the doors, you’re instantly greeted with a ‘hello’ from every worker in sight. Any open seat is available in this ‘seat yourself’ style restaurant and servers are available to get your drinks and food order. And don’t forget to ask for your complementary bib if you’re a messy eater (they’ll personally tie it on for you).
We spoke with Gary Holland, CEO of One Holland Corporation, and he gave us the rundown of how longtime Skyline lovers dig into a 3-Way. A 3-Way includes spaghetti covered with chili and topped with a mound of shredded cheddar cheese.
One thing Holland made clear was that “Friends don’t let friends twirl at Skyline.” So instead of twirling the spaghetti around your fork, you eat the 3-Way with the “Cut and Lift Technique.” You cut into it like you would a pie, getting a great portion of spaghetti, chili, and cheese in one bite.
Skyline is open Sunday through Thursday from 10 am – 10 pm, and Friday and Saturday from 10 am -11 pm.
Earlier this summer, the Lexington community was invited to sample the Cincinnati flavors at a Neighborhood Block Party held at the construction site. Now, hardcore Skyliners and newcomers can enjoy Cheese Coneys and 3-ways whenever they travel down the Richmond Road block.
The Lexington LaRosa’s is projected to open sometime in early 2019. The 6,725-square-foot location will offer dine-in, pick-up, and delivery. The 200 person dining area also will feature a four-sided bar serving a full menu of beer, wine, and mixed drinks along with a “Buddy Room” for parties and events.
